Honey piece-cakes (oval shaped-melomakarona)



1 cup olive oil

2 cups corn oil

1 cup sugar

½ cup orange juice

1 tablespoon orange peel

½ cup brandy

2 teaspoons baking powder

1 teaspoon baking soda

1 tablespoon ground cinnamon + ground gloves

10-12 cups flour (for all purpose) or as much as it is

needed for a soft dough

1/2 kg crushed walnuts

SYRUP: 4 cups water

½ cup honey

3 cups sugar

1 cinnamon stick + lemon peel

Juice of ½ a lemon



In a mixing bowl blend all ingredients together. Add the baking soda dissolved in the brandy.

Stir to blend well and the sugar to be dissolved, add the flour gradually. Cut the dough in pieces, roll them into even oval shape. Line greaseproof paper in the pan and arrange the piece-cakes. Bake in the thermofan oven at 180 degrees Celsius for 20-30 minutes. It makes about 50 pieces.

SYRUP: put all ingredients together in a pot, stir well until to dissolve. Bring to boil for about 7 minutes and remove from heat, it is ready. Dip the cold piece-cakes into the hot syrup and place them back in the pan. Brush them with honey and scatter the crushed walnuts on top.
