Soup with meat balls



250gr beef mince meat

4 tablespoons of Carolina rice

1 onion

2 medium potatoes

1 baby marrows

1 carrot

dill and lemon juice

3 tablespoons olive oil



   Mix the mince meat with the onion and ½ baby marrow (grated in the food processor), the rice and the dill, knead the mixture, shape round meat balls and keep them in the fridge until you prepare the rest. You pour 3-3,5 glasses of water in a pot and bring it to boil. Peel the potatoes, cut them in cubes and put them in the boiling water, you do the same with the carrots and the other ½ of the baby marrow, after having them cut in rings. Add the meat balls. Boil them for about half an hour, until the ingredients are well softened. You switch off the heat and add the olive oil and the lemon juice. If you like you can mash all of the soup in the food processor, dish it into small containers or glass bottles and every time you need one, you warm them by placing them into a bowl of hot water.
